WHAT YOU'LL DO

  • Assist the Executive Chef in overseeing day-to-day kitchen operations. 

  • Supervise and coordinate the activities of kitchen staff to ensure efficient food production. 

  • Maintain the highest standards of food quality, taste, and presentation. 

  • Develop and test recipes and contribute ideas for new dishes, food specials, and seasonal/special event menus. 

  • Ensure that kitchen safety and sanitation standards are consistently met (complying with Alaska food safety regulations, Internal training modules and checklists, and HACCP Plans. 

  • Monitor inventory levels and assist in ordering supplies while controlling food and labor costs. 

  • Provide training, mentoring, and performance feedback to BOH staff. 

  • Assist in scheduling kitchen personnel to maintain staffing requirements and manage labor costs. 

  • Step into the role of Executive Chef during their absence. 

  • Work collaboratively and professionally with the front-of-house team to ensure seamless guest service. 

  • Participate in special events, banquets, and catering services as needed. 

  • Handle customer feedback professionally and make necessary adjustments. 

  • Assists in the training of location storeroom staff in proper ordering and transferring procedures. 

  • Be able to overseeing ALL deliveries for accuracy with storeroom staff and in the completion of necessary daily paperwork, i.e., Ordering, Inventory counts, invoice processing, Labor reports, Scheduling 

  • Participates in all Health Inspections and QA Inspections; ensuring an adequate amount of ServSafe and/or Alaska Food Handler qualified staff in each kitchen.   

  • Enforces and follows all Pursuit policies and regulations.  

  • Participates in all monthly inventories. 

EDUCATION & IDEAL EXPERIENCE

  • High school diploma or GED, bachelors, or associates degree preferred. 

  • Serve-safe certified, or a food safety certification preferred. 

  • Degree or diploma in Culinary Arts, Hospitality, or related field preferred. 

  • Minimum of 5 years of progressive experience in a professional kitchen, including at least 2 years in a leadership/supervisory role. 

  • Proven experience in a high-volume AND fine-dining environment. 

  • Strong knowledge of culinary techniques, food safety, and kitchen equipment. 

  • Excellent leadership, organizational, and communication skills. 

  • Ability to work under pressure and in a fast-paced environment. 

  • Flexible schedule, including availability on nights, weekends, and holidays. 

SKILLS & ABILITIES

  • Strong understanding of inventory control systems (Craftable experience preferred). 

  • Excellent communication, analytical, and project management skills.

  • Critical skill or ability to be successful in this role  

  • Must be able to perform all manual aspects of kitchen operation. 

  • Must be able to manage others under high pressure environment at times. 

  • Ability to stand for extended periods. 

  • Ability to lift up to 50 pounds. 

  • Manual dexterity to handle knives and kitchen tools safely.
